Mutta Bajji | Egg Bajji | Battered Fried Egg Fritters
Kerala Thattukada Egg Bajji. This is how I love to serve Kerala ‘Thattukada’ (street vendors) Mutta Bajji or ‘Egg Bajji’ at home. This is the perfect batter if you are looking for it. The Bajjis are nice and soft, yet with that crisp outer coating. It can be made very quickly! I also share a quick and easy chilli-tomato sauce to go along with this bajji. It is great with all types of fritters and even fragrant rice dishes.
This recipe requires that you coat the egg, thoroughly before adding to hot oil. Egg Bajji made with a runny batter that doesn’t completely cover the egg is a strict no-no. It is likely to explode when you add it to the oil.
Back when my mom had her catering business, we often got orders for tea snacks, and this Egg Bajji was made regularly. Once I remember, one of her dozen helpers, ‘Murali’ was making the Egg Bajji.. He must have been in a hurry and didn’t coat the egg properly. I heard a commotion from the kitchen, to learn that the egg had popped in the oil causing oil to splatter on to his face. “Ouch”, I_know! Ointments were applied. He was fine.
However, he woke up the next day with a burn mark on his upper lip, making him look like he, had a moustache similar to that of Hitler! All was well within a few weeks. So please be careful to coat the eggs properly. Refer to video.

How to make Mutta Bajji | Egg Bajji | Battered Fried Egg Fritters- Recipe at a glance:
- Boil Eggs. Peel them and set aside.
- Add all ingredients for batter to a bowl and stir, adding enough water till smooth.
- Deep fry in oil.
- Serve with the Chilli Tomato Sauce.
Ingredients:
- 6 Eggs, boiled
- Oil for deep frying
- 1/2 cup chickpeas flour/besan / kadala podi
- 1/4 cup plain flour/maida
- 6 Tbsp Rice flour
- 1 tsp Kashmiri Chilli powder
- 1/2 tsp Salt
- 1/4 tsp Baking soda
- 1/4 tsp Asafoetida
- 1/8 tsp Cumin powder
- Less than 1 cup of water
For Instant Chilli Tomato Sauce:
Ingredients:
- 1 small red onion
- 1 large tomato
- 1 long red chilli (mild)
- 1 large clove garlic
- 1/2 tsp Kashmiri chilli powder
- 2 Tbsp Coriander leaves
- 1 Tbsp Vinegar
- 1 Tbsp Olive oil
- Salt to taste
